Homemade Roselle Jam

Talk about waste not, want not! I used the hibiscus flower petals to make an entire pot of tea and then reduced the petals to make jam!

Ingredients:

1 lb hibiscus flower petals/rose mallows/sorrel/roselle (I can’t seem to figure out the real name for this flower)

2 Quarts of water (8 cups)

3 T sugar (more if you’d like)

Directions:

Thoroughly wash the flowers. Peel off petals and throw away the buds.

Boil petals until the water turns red, approximately 12 minutes.

Remove the tea leaving about 1/2 cup of liquid and cooked petals in the pot.

Add sugar.

Keep stirring until most of the liquid evaporates.

Jam is ready! Spread on bread or crackers.
