I just used garlic, onions, butternut squash (pumpkin would work as well), olive oil, Provence dry herb mix and salt/pepper. Personally, I don’t like to add potatoes to soups and the veggie stock, unless homemade would add too much sodium. If you like the soup chunky, stop cooking once the squash becomes soft. If you like the soup as a puree, use a masher or spoon to blend the onions and squash. I might try adding turmeric and ginger to my next batch.
