15 Minute Meal: Bean, Mushroom and Veggie Stir Fry

quick stir fryI definitely wouldn’t call myself lazy but I do love 15 minute dinners. I used cranberry beans in this recipe which required an overnight soak but you can choose canned beans if it’s more convenient.

This doesn’t need a recipe: chop up your mushrooms and snap the ends off the peas. Stir fry the snap peas and beans in oil with a little garlic, then add the mushrooms. Season with cooking wine, light soy sauce, salt and white pepper. Pair with brown rice. Done!
