The secret to a hearty pot of non meat kimchi jigae is *drum roll please*……dried anchovies! And really good kimchi of course. I haven’t really found good quality kimchi in HK yet so I settle with what I can find. What I love most about this meal is that you only need one pot and there’s always leftovers.
