Loofah Mushroom Soup

Perfect for a quick lunch or snack.

Ingredients: Two chopped loofahs, scallions, 2 red chili peppers, 2 cloves chopped garlic, and  1 cup mushrooms.

Saute garlic with a little oil until fragrant, add loofah and chili.

Saute loofah for 1 minute and then add mushrooms. Season with salt, pepper, and a little oyster sauce.

Saute mushrooms for 30 seconds and then add 2-3 cups water. Cover and let boil.

Serve with chopped scallions as garnish.
